Isomalt (also called palatinitol) is an excellent sugar replacer derived exclusively from sucrose.

It is manufactured in a two-stage process:first,sucrose is enzymatically transformed into isomaltulose.Second, the isomaltulose is hydrogenated to produce isomalt. In fact, isomalt is composed of 6-O-alpha-D-glucopyranosido-D-sorbitol (1,6-GPS) and 1-O-alpha-D-glucopyranosido-D-manitol dihydrate(1,1-GPM-dihydrate).Therefore, isomalt, which contains 5% water of crystallisatain, is an odorless, white crystalline substance. It is available in a wide range of variants and particle size from granual to powder-to suit any application. The sweetness of isomalt is about half of sucrose. Its speciality,physiological function and edible safety has proved by experiments. And it was regarded as safe(GRAS) food ingredient by American FAD.
